What is known about its origins?

Many typical Middle Eastern dishes are very old and not much is known about their histories. This is the case of mujaddara, for which the exact year of its first appearance is unknown. But luckily, there is a theory that seems to be accurate.

The legend takes us far back in time, indicating that this dish is of Persian origin and was very popular among the lower classes, who, lacking abundant resources, had to make do with what was available.

At that time, rice and lentils were very affordable foods. Although they were also widely consumed by the upper classes, as they formed a main part of their diet. So, when combined, they created a wonderful and surprising flavor, which became one of their most treasured recipes.

It spread to many more countries, thanks to expeditions, eventually becoming an international dish and a staple of Middle Eastern cuisine.

Characteristics and Variants

Also known as mudardara, mejadra, and myadra; mujaddara is a delicacy from the Middle East. A dish based on lentils and rice, with ingredients added depending on the place of preparation; fried onions and olive oil are commonly included, giving it a more vibrant flavor.

It doesn’t have many variants. However, the most well-known include brown mujaddara, prepared with green lentils, and yellow mujaddara, made with red lentils.

This dish contains many vitamins and minerals that make it unique, as well as plenty of proteins, helping individuals maintain abundant energy and keep a good mental and physical balance in excellent condition.
