Ingredients

2 cups of Rice

1 Chopped onion

1 Yellow chili pepper

1 ½ cup of Cilantro

1 Large chopped carrot

1 Large shelled corn

1 Julienne chopped red bell pepper

3 Medium yellow potatoes

1 cup of Peas

1 Vegetable stock cube

1 teaspoon of Ground garlic

Salt and oil

Preparation

Step 1 : Dice the carrot and julienne the bell pepper, and shell the corn, reserving everything along with the peas.

Step 2 : In a medium pot, sauté the garlic and onion until transparent.

Step 3 : Meanwhile, blend the cleaned cilantro and chili with a little water, and set aside.

Step 4 : Once the onion is ready, add the vegetables, peas, and corn, and cook for a few minutes.

Step 5 : Then, add the cilantro and chili mixture, along with the stock cube, mix well, and add the rice and peeled, chopped potatoes.

Step 6 : Cover with water for cooking and add salt.

Step 7 : Cover the pot and cook for 10 minutes until the rice is done.

Step 8 : If the water is consumed too much, add more.

Step 9 : The soup should be thick before serving.
