Ingredients

2 teaspoons of Oil

5 Chopped cucumbers

3 Garlic cloves

2 Diced onions

3 cups of Vegetable broth

¼ cup of Fresh chopped dill

Black pepper

1 cup of Soy milk

Preparation

Step 1 : In a large pot, heat the oil and sauté the cucumbers, garlic, and onion until the onion is transparent.

Step 2 : Next, add the vegetable broth and cook over low heat for about 15 to 20 minutes, or until the cucumbers are soft.

Step 3 : Then, remove the soup from the heat and blend until smooth.

Step 4 : Before it cools, add dill and season with pepper to taste.

Step 5 : Let it cool, and just before serving, stir in a cup of soy milk.
