Ingredients

1 Small chopped onion

2 Chopped garlic cloves

1 Medium diced carrot

2 Chopped celery stalks

½ Chopped zucchini

½ teaspoon of Dried oregano

1 Bay leaf

1 can of Chopped tomato

900 milliliters of Vegetable broth

1 Medium chopped potato

200 grams of Cooked white beans

175 grams of Small pasta

1 ½ tablespoon of Soy sauce

1 pinch of Pepper

Any fresh herbs for garnish

Preparation

Step 1 : In a pot over medium heat, add oil or water, then add the onion and garlic.

Step 2 : Next, add the carrot, celery, zucchini, oregano, and bay leaf.

Step 3 : Sauté the vegetables for a few minutes until they are tender.

Step 4 : Add the tomato, broth, and potato.

Step 5 : When the mixture begins to boil, reduce the heat to medium and cover the pot.

Step 6 : Cook until the potato is tender.

Step 7 : Meanwhile, cook the pasta in another pot.

Step 8 : Once the potato is ready, add the beans, soy sauce (or salt and pepper to taste).

Step 9 : When serving, distribute the pasta onto plates and ladle the soup over it.
