Ingredients

½ Purple onion julienne

½ Red bell pepper julienne

3 Chopped mushrooms

2 Garlic cloves finely chopped

1 Fresh ginger piece, peeled and finely chopped

½ Fresh Thai chili finely chopped

2 cups of Vegetable broth

400 milliliters of Coconut milk

1 tablespoon of Brown sugar

275 grams of Tofu

1 tablespoon of Tamari

½ Lime juice

Fresh cilantro

Preparation

Step 1 : In a pot, add the vegetables and vegetable broth and bring to a boil over medium heat.

Step 2 : Let it cook for 5 minutes.

Step 3 : Then, add the cubed tofu and cook for an additional 5 minutes.

Step 4 : Remove the pot from the heat.

Step 5 : Add the tamari or soy sauce, lime juice, and chopped cilantro to the soup.

Step 6 : Stir well.

Step 7 : The soup is ready to be served.
